I am currently in the second year managing a new farm in Columbia County. This has been an ambitous farming project that was created to support a new partner restaurant (fine dining) in NYC. Our first year, 2020, has been a great learning experiencing - gathering new clients, establishing protocols specific to the land, training employees, etc. With the help of the farm crew and numerous other parties (contractors of all sorts), the farm is slated to start 2021 with the same goal of supplying the new restaurant (which is geared to open in 2021, because of the pandemic delays) with year-round produce from the 2 acre market garden (includes 1/3 acre in greenhouses), mushrooms from logs, honey, foraged foods, flowers, and more. The practices I've established are "beyond organic", meaning the farm is taking a lower impact approach now that it's established: reduced/minimal tillage, cover cropping, etc. Everything grown will be planned for with the chef in mind.
Description of marketing method:
I would plan to supply culinary crops (and regular market garden offerings) to a CSA/farmers market customer base in addition to chefs in the area.
